BUCKWHEAT AND APPLE PANCAKES (GF)

It has been too long since I last posted a recipe. I really want to get back on track and activate this blog as I still cook meals every day and I really want to share my best creations with the world.

Lately, I’ve been making a lot of crepes with buckwheat flour and I love love love them. This is a variation I tried for breakfast the other day and I must say the pancakes turned out beautifully. Also, my three-year-old daughter loved them. They are simple, gluten-free and just super tasty. I hope you love them as much as we did! 🙂

BUCKWHEAT AND APPLE PANCAKES (GF)

Prep Time 10 minutes
Cook Time 15 minutes
Servings 2 people

Ingredients

  • 2 eggs
  • 200 ml oat milk
  • 1/4 tsp salt
  • 150 gr buckwheat flour full grain
  • 1/2 tsp baking powder aluminium free
  • coconut oil virgin
  • 2 apples
  • maple syrup

Instructions

  1. 1. In a medium size bowl, whisk the eggs and and in the oat milk, the salt, the flour and the baking powder on e by one.

    2. Whisk until all ingredients are well combined and set aside for 20 to 30 minutes.

    3. Wash the apples and then cut horizontally into 1/2 cm slices (see on the photo)

    4. In a skillet preheat the coconut oil, when nicely heated (but not burned) add 1/4 cup schoops of the pancake batter to the skillet and place a slice of apple on each pancake.

    5. Bake the pancakes for 2-3 minutes on each side on a medium flame, until they get a little browned.

    6. I think they are best, served with maple syrup.
