LARA’S “BIRCHERMÜESLI” RECIPE (V)

In Switzerland, “Birchermüesli” is a classic breakfast. Typically it is made with oats, fruit, raisins, nuts, yogurt, and cream. often lots of refined sugar is added to it. In my opinion, it is often boring and way too sweet.

My variation of “Birchermüesli” is vegan, packed with many healthy ingredients and no addition of refined sugars. This is one of my absolute favourite breakfasts, and although I do not want to brag about my own recipes, It is one of the best tasting “Birchermüeslis” I have ever tasted ;).

Life is busy. We work, have tight schedules, have kids, etc.. still, it is so important to look after ourselves in the best possible ways. For me, food is one very important pillar that contributes to a healthy or unhealthy lifestyle. Therefore, when time is short I like to nurture myself with a smoothie full of energizing and healthy ingredients. Smoothies are a great way to get in a lot of good nutrients and do not take a lot of time to make. The only requirement is: you need a blender!

BUCKWHEAT AND APPLE PANCAKES (GF)

It has been too long since I last posted a recipe. I really want to get back on track and activate this blog as I still cook meals every day and I really want to share my best creations with the world.

Lately, I’ve been making a lot of crepes with buckwheat flour and I love love love them. This is a variation I tried for breakfast the other day and I must say the pancakes turned out beautifully. Also, my three-year-old daughter loved them. They are simple, gluten-free and just super tasty. I hope you love them as much as we did! 🙂

“BÄRNER ANKEZÜPFE” A TYPICAL SUNDAY BREAD

The “Bärner Ankezüpfe” is a typical Swiss bread. It is a dense and yet fluffy bread. The density comes from the butter and milk base, the fluffiness from the yeast and the braided form. I make my “Bärner Ankezüpfe” almost the way my grandma does. As I do not cook with white sugar and conventional flour, I use honey and Spelt flour, in my opinion the result is just as great.

“UR DINKEL” SPELT – BUCKWHEAT BREAD

Bread is great, I love it especially when it is flavorful and dens. I eat bread daily, I love it plain, with avocado and scrambled eggs, with nut butter and honey, and with many other toppings. I never use white wheat flour, wheat is everywhere and in most cases highly processed. At NGI I learnt that many people are intolerant without knowing it which when consumed too much enhances inflammation in the digestive track. If you start using other grains you realise how many options you have and how meals get diverse. “Ur Dinkel” is an old Spelt species (urdinkel.ch), spelt is probably the result of natural cross breeding between emmer and dwarf wheat.

DELICIOUS ORANGE GRANOLA

This recipe is inspired by a recipe from Heidi Swanson’s “super natural every day” cookbook. I like to sweeten my granola with honey. I think the outcome is better, but you can also use maple syrup or agave.

This Granola is everything a Granola should be, it has an intense flavor and great texture. Flaky and crunchy with some sweet and sour soft bites.

TSAMPA + BANANA PANCAKES TOPPED WITH PERSIMMONS, HONEY AND TOASTED COCONUT FLAKES

First, I must write a little something about Tsampa, especially for does who don’t know what it is. Tsampa is one of the main ingredients in Tibetan food. It’s simply roasted barley ground into a fine flour. My mum used to make a porridge like breakfast with it when I was a child. I loved it plane mixed with a little butter and rice milk. Later I started to add fruit to it and now I like to experiment with it and use it as a substitute for wheat flour. In Switzerland, you can buy it at health food stores labeled as “SONAM’S TSAMPA”.
